Swiss cheese has holes because of the fermentation process it goes through. It is made by putting bacteria in milk. It begins to curdle and produce lactic acid. Carbon dioxide gas is another byproduct of the process. In Swiss cheese, the carbon dioxide is trapped inside the rind, forming bubbles in the cheese.
